Camping Menu

Just back from a week at the family place in the mountains. Cooking is always something of an inexact science at the cabin: strange stove, limited grocery choices, equipment that appears and disappears with each season, and so forth. Still, I managed to put together what I consider some passable dishes:

Sunday night (brought from home):
Lamb leg marinated in dijon and tarragon.

Monday night:
BBQ chicken with couscous.

Tuesday night:
Steak with garlic and pepper spice rub. Mashed potatoes with herbs.

Wednesday night:
Tacos.

Thursday night:
Pork marinated in lime juice, garlic, and salt. Served with diced cucumbers and tomato.

Friday night:
Steak with gorgonzola sauce.

Saturday night:
Chicken with thai spice rub.

I can only speak to the Saturday night meal, of which I saw Michael and Kevin both eating it like it was going out of style, and my KIDS ate up a lot of the chicken as well!

Kinda wish I'd been able to sneak out early enough to make dinner on Friday night... the steak sounds yummy! But that just wasn't in the cards.
