These were unexpectedly popular at ACUS. But I'm mostly posting the recipe for Jack because these are not-death.
Orange Carrot Cookies
1 cup sugar
3/4 cup butter
1 egg
1 tsp vanilla
1 cup of mashed cooked carrots
2 cups flour
2 tsp baking powder
1/4 tsp salt
Cream sugar and butter. Add egg and vanilla. Mix until smooth. Add mashed carrot. Add flour, baking powder and salt. Mix well. Drop by teaspoonfuls onto a greased baking sheet. Bake at 350 degrees for 8 to 10 minutes.
Non-death! Such a good thing!

hmmm... I have all those things in my kitchen already. I'll have to see if I can do these half as well as Jenn does!
Posted by: Jack at April 5, 2004 9:31 AMThese were really really wonderful. They actually reminded me of the sort of sweet-biscuit shortcake I adore, and have a bad habit of eating plain instead of with strawberries. So it's like having bite-sized pieces of an already-favorite! Yum!

Posted by: Jenn at April 5, 2004 4:39 PMSay... directions call for Baking Powder and Salt, but I don't see amounts of either among the ingredients. Salt's easy to guess at, but I'd hate to get the amount of baking powder wrong.
Hmm....that's really interesting. I'd just copied and pasted this from an email from my mom without looking at it closely. I'll have to go hunt that up for you...
